This is an old Virginian recipe. Enjoy the richness and integrity that older recipes bring to the palate.
Ingredients:
2 cups white sugar
¾ cup butter
¾ cup cocoa dissolved in a small amount of boiling water
4 eggs
2 cups flour, sifted once
1 cup sweet milk
Dash of salt
1 tsp. vanilla
1 scant teaspoon soda
Directions:
Cream sugar and butter until light. Add cocoa. Add the eggs, one at a time, beating after each. Add the flour alternately with the milk. Add salt and vanilla. Add the baking soda dissolved in a very small amount of boiling water at once and beat well.
This will seem thin but will make a fine cake. Bake 350 degrees in a loaf pan. Frost with orange coconut frosting.
Orange Coconut Frosting
Ingredients:
3 T. butter
2 cups powdered sugar
¼ cup orange juice
¾ grated, or shredded coconut
Directions:
Cream butter until very soft. Add sugar gradually, thinning with orange juice to spreading consistency. Beat until smooth. Beat coconut into frosting.
